Coil is a modern take on the classic hosomaki (細巻き, Thin Sushi Roll) in a classy minimalist ambience. The restaurant aims to fuse together tradition and modernity, which can be seen from the shop's sleek modern interior, combined with the rather traditional menu it offers. Coil offers a unique do-it-yourself (DIY) experience where you pick a selection of fillings for your hosomaki, which you will then roll up the hosomaki yourself before eating it. Apart from the hosomaki, they also offer a DIY tea ceremony (茶道, Sadō, Japanese tea ceremony) experience, as well as monaka soups (もなかスープ, Monaka Sūpu) as a side.

Coil might seem a bit touristy and overpriced at first, but we do believe that the experience is worth the money. The shop's interior is bright and minimalist, with a modern Japanese sensibility. The price is on the higher side, but we wouldn't call it a rip-off.
Choosing your own ingredients is a bit of a gimmick, but of course, you can customise it to your own preference. Perhaps what we liked was the way it was served, with rice nicely layered over nori and served in a multi-layer wooden box to keep it warm. You can layer the ingredients as you want, and then roll it up yourself. It is part do-it-yourself dining experience, and partially a bit of a gimmick. It is nonetheless still a fun experience for tourists, and an instruction sheet is provided in English.
The biggest surprise might be the tempura (天ぷら, Tenpura) mix that comes together with the set since we didn't actually know that it came with tempura. The batter was really light and crisp, and the ingredients were also really fresh.
While Coil is indeed on the pricier side of food in Japan, there's definitely a bit of a tourist tax on it. We do feel like the food and experience is worth giving it a try at least once, and it's no surprise that it's the most popular restaurant in Kanazawa on Tripadvisor. The dining atmosphere is also great, so it's a really classy place to enjoy, and really instagrammable.

5 Dishes Hosomaki+ Tempura Set

For this set, you can select 5 neta (ねた, Ingredient) from the selection of over 50 ingredients for your hosomaki. There are also 6 dish and 8 dish selections for those who want more ingredients. You will be served the hosomaki in a multi-layered wooden box, where each layer is a piece of nori (のり, Seaweed) that already has the sushi rice (酢飯, Su-Meshi, Vinegared Rice) nicely laid out atop it. You will take the slice of nori and rice, and place it atop your bamboo roller. Then you can choose how you want to lay out your 5 dishes on your nori. Once you've laid out your 5 dishes, you can roll up the nori into a hosomaki using the bamboo roller. Once done, it's ready to eat! You can eat it as-is, or with some shoyu (醤油, Shōyu, Soy Sauce) and wasabi (山葵) on the side. Each set comes with 4 sets of nori and rice, so be sure to pace out your dishes so that you don't run out!
Apart from the hosomaki, the tempura (天ぷら, Tenpura) served with the set is also amazing. The batter is incredibly light and crisp, and goes extremely well with just a bit of salt. The set of ingredients in the tempura vary, but typically it consists of the seasonal vegetables.

In the DIY Tea Ceremony (茶道, Sadō, Japanese tea ceremony), also available as an add-on to the Hosomaki Set for ¥660, you can choose from a variety of high-quality teas. Then you can follow the listed instructions to conduct your own tea ceremony, scooping the hot water from the pot using a traditional ladle, and pouring it into your own tea pot. The steps for a tea ceremony are often contemplated, but they are explained in an easy-to-follow method here so that you can also conduct it yourself.
