Asakusa Kagetsudo is one of Asakusa's most famous shops, with its jumbo fluffy and crispy that are often featured on Japanese television shows. Selling over 3000 buns a day, these buns are freshly baked in-house, and a must-try when you are in Asakusa. There's a reason why the shop is famous and popular amongst locals, because this unassuming pastry is one of the most iconic breads you can get in Japan. The top of the bun is crisp, while the inside is light and fluffy, with a delicious buttery taste, and most of all, it's a jumbo-sized bun that is much larger than the usual melon pan. It's no wonder that this bakery has been famous in the area for so long, and has grown a cult-following from being featured on Japanese television.

Asakusa Kagetsudo's Unique Points (こだわり, Kodawari)

Asakusa Kagetsudo is extremely proud of their jumbo melon pans, and most of all, for its fluffy and crispy texture that they attribute to their secret fermentation method. Unlike ordinary bread that ferments only for 40-60 minutes, Asakusa Kagetsudo ferments their melon pan for over 3 hours. This is typically considered a taboo in the industry as the bread becomes over-fermented, developing an alcoholic smell, and doesn't puff up like typical bread dough. In order to counter this, Asakusa Kagetsudo uses their own method of fermentation that resembles the brewing process more than it does the typical bread fermentation process. The dough is kept in a state where the yeast is closely monitored and kept active for a longer time period, leading it to puff up into the jumbo bread that they sell today. The baking method also changes based on the season in order to keep the product at the top quality, after all, fermentation is greatly affected by temperature, humidity, and condition of the flour, which also varies greatly by season. The lessons from the founder who specialized in fermentation continue to be passed down through the generations in order to continue selling the best quality melon pan.

If you're in the Asakusa area, this is a snack that you definitely should not miss. This melon pan shop is one of our favourites in Tokyo, and this unique bread is something that not many foreigners know of before arriving in Japan. Yet it's a very much ubiquitous dish throughout Japan. Unlike many shops, including convenience stores, where the melon pan is pre-baked and pre-packed making it soft, the ones at Asakusa Kagetsudo are freshly baked and hot. Nothing quite hits the spot like freshly baked warm fresh bread that is both flavourful and has a great texture. There are few other places in Tokyo that you can always return to knowing that the bread is freshly baked and hot.
We recommend getting the plain one in order to enjoy the delicious original taste of the bread, but if you're visiting on your second time, you could also consider one of the whipped cream options to change up the taste. Regardless, this melon pan is one of the great snacks that you can when you're in the Asakusa area!

Asakusa Kagetsudo's Story

Asakusa Kagetsudo was founded in 1945 by its founder who had majored in Fermentation at the Tokyo University of Agriculture. Before opening Asakusa Kagetsudo, he worked for over 10 years in research for the flour milling industry. He then used all the knowledge he built up over the years to create the jumbo that Asakusa Kagetsudo still sells today.
