Kuramu is one of Tokyo's best hidden finds, specializing in an out-of-this-world clam broth ramen (ラーメン, Rāmen). Located in Futako-Tamagawa (二子玉川, Futako Tamagawa), a short ride from Shibuya (渋谷), this hole-in-the-wall shop always commands a queue of locals during lunch and dinner. The soup broth is jam-packed with the umami from the kai (貝, Shellfish) and hotate (ホタテ, Scallop) that have been boiled down to produce this lovely concentrated, and yet light and addictive broth. There's nothing quite like it, and that's why it's such a favourite amongst ramen enthusiasts.
Kuramu's Unique Points (こだわり, Kodawari)
A specially selected assortment of top-grade asari (アサリ, Manila Clam) and hotate are slow-cooked in their broth to bring out the best umami (旨味, Savoriness), taste, and essence of the ingredients. Even their chashu (チャシュウ, Chashū, Roasted Pork) uses Japanese back rib, and noodles are made from Kintoun (an extremely high quality flour).
Kuramu Review and Thoughts
Recommended
Kuramu is probably our favourite ramen shop in Tokyo, and its a ramen that we can eat multiple times a week without being sick of it. The pure clam version of the broth is an unadulterated flavour explosion, while being light and not overwhelming. Each spoonful of soup is delicious, and yet you don't feel it's overly oily or overwhelming like some tonkotsu ramen (豚骨ラーメン, Tonkotsu Rāmen) might get. We would not recommend getting the clam and tonkotsu (豚骨, Pork bones) broth as the tonkotsu actually feels like it waters down the broth, and dilutes the clam flavour instead of complementing it. Instead go for the 100% clam version, which is out of this world.
The best part about Kuramu is how off-the-beaten-path it is, you'll often find a decently short queue of Japanese waiting in line, but not the throngs of foreigners that you would find at Tokyo's popular ramen joints. The waiting time is around 10 minutes, as opposed to some hour-long waits the popular ramen joints in Tokyo have. It's also really affordable for the quality of food that you get, while its not the cheapest, it's all full of ingredients, including two types of chashu (チャシュウ, Chashū, Roasted Pork). This is one ramen shop that we can recommend with no hesitations to any of our friends.
Do note that if you have a shellfish allergy, you should not visit Kuramu as all of their dishes use shellfish in it.
Kuramu Menu Recommendations
くらむそば(醤油)
Kuramu Soba (Shoyu)
¥850
The Kuramu Soba is a pure clam broth version, as opposed to the Chuka Soba which mixes in tonkotsu (豚骨, Pork bones) that dilutes the taste. Between the shoyu (醤油, Shōyu, Soy Sauce) and the shio (塩, Salt), we feel that the shoyu version gives more of an oompf when you sip it.
あさりの混ぜご飯
Asari no Maze Gohan
¥250
A small amount of rice to be mixed into the leftover ramen broth. This allows the rice to absorb the gentle fragrance of the asari (アサリ, Manila Clam).
