Don’t expect a fancy fine-dining meal – Tsuta focuses on elevating the taste of the simplicity of ramen. Using a simple shoyu (醤油ラーメン, Shōyu Rāmen, Soy Sauce Ramen) or shio (塩ラーメン, Shio Rāmen, Salt Ramen) broth, all ingredients are natural, and the broth is designed to thicken and bring out the dense natural umami of each ingredient. Even the flour for the noodles are specially crafted and curated in-house.
Their signature ramen is the Shoyu Ramen, which comes with A5 wagyu (和牛, Wagyū, Japanese cattle), menma (メンマ, Fermented bamboo shoots), and negi (葱, Spring Onion). The first sip of the broth hits you with a clear, but deep taste. Vaguely reminiscent of a strong beef broth, the soup blends together well with the shoyu (醤油, Shōyu, Soy Sauce) and the fragrance of truffle oil giving it a slight richness. The wagyu beef slices are soft and tender, with just the right amount of fat on it. It also comes with a small ume (梅, Japanese plum) puree on the top that you can mix into the soup in order to change the flavor profile, with the sourness complementing the richness of the soup.
