Don’t expect a fancy fine-dining meal – Tsuta focuses on elevating the taste of the simplicity of ramen. Using a simple or broth, all ingredients are natural, and the broth is designed to thicken and bring out the dense natural umami of each ingredient. Even the flour for the noodles are specially crafted and curated in-house.
Their signature ramen is the Shoyu Ramen, which comes with A5 , , and . The first sip of the broth hits you with a clear, but deep taste. Vaguely reminiscent of a strong beef broth, the soup blends together well with the and the fragrance of truffle oil giving it a slight richness. The wagyu beef slices are soft and tender, with just the right amount of fat on it. It also comes with a small puree on the top that you can mix into the soup in order to change the flavor profile, with the sourness complementing the richness of the soup.

Tsuta's Story

Before starting Tsuta, the late founder Onishi Yuki worked at his father’s ramen shop, and after a short stint in the fashion industry, decided to open his own ramen shop at 28 years old. In 2012, Tsuta opened in Sugamo, Tokyo, in 2014, the black truffle and shoyu ramen combination was put on the menu, and in 2015, the restaurant gained its first Michelin star.
