Morikuni is the only sake brewery on Shodoshima, established in 2005, they revived local sake production 35 years after the last sake brewery on the island closed down. Their establishment today has three parts: a Gallery & Shop, a Cafe & Bar, and a Bakery.
Morikuni Bakery specializes in Coppe Pan (コッペパン), a soft and long bread usually with served with fillings. Leveraging on its heritage as a sake brewery, the Coppe Pan served in Morikuni Bakery uses rice flour made from rice used for brewing sake. While flavors change seasonally, some of those available include anko (餡子, Red Bean Paste), ichigo (苺, Strawberry) jam, and cocoa (ココア). Apart from Coppe Pan, they also offer scones made using a mix of flour and sake rice flour, as well as raisins that have been stewed in sake. Resulting in a light and crispy scone, with a rum and raisin sort of taste.
Morikuni Cafe & Bar offers a single main dish on the menu, as well as a variety of desserts and alcohol options. Many of the items use Sake Kasu (酒粕, Sake Lees), a fermented paste that is a by-product of the sake fermentation process. The desserts are also made as otona-no-aji (大人の味, An adult’s taste) taste, which means that they are designed to be less sweet with a more refined taste.
