Le Musee De H is one of Kanazawa's most popular dessert shops, serving up desserts by renowned Japanese pattisier, Hironobu Tsujiguchi, who has represented Japan in world tournaments multiple times and won the title of World-Champion. He also took part in 1997 in Japan's Iron Chef as a pastry chef and won the competition. Located within a museum, Le Musee De H aims to use the best of local ingredients from the Noto Peninsula (能登半島, Noto-hantō) while combining it with sophisticated designs befitting of its location. Le Musee De H uses ingredients from the local Noto Peninsula (能登半島, Noto-hantō) and the Hokuriku Region (北陸地方, Hokuriku Chihō) that is both fresh, and healthy. The cafe is designed to be a relaxing space where one can indulge in sweets, with the idea of omotenashi (お持て成し, Japanese spirit of hospitality) that caters to the five senses of customers. While the owner chef, Hironobu Tsujiguchi, is now a famous celebrity chef in Japan, he also celebrates his roots through this shop as he was born to a wagashi (和菓子, Traditional Japanese sweets) shop family within Ishikawa Prefecture (石川県, Ishikawa-ken).
