Ushioya is a popular shop specializing in kaisendon (海鮮丼, Seafood rice bowl). Their signature item is the buri (ブリ, Young Yellowtail) tataki (たたき, Broiled), a dish that they pioneered after being inspired by Kochi’s katsuo tataki (鰹たたき, Seared Bonito).
Ushioya Higashi Chaya's Unique Points (こだわり, Kodawari)
Buri is traditionally a fish caught during the winter seasons, where the fish have a good portion of fat giving rice to its rich taste. In order to maintain the quality throughout the year, Ushioya, uses domestically farmed buri to ensure that the quality of the fish remains consistent. During the winter months, they will also sell special buri dishes that take advantage of the taste of wild caught buri and its fatty meat.
To make buri tataki, the meat is prepared using sea salt specially sourced from the Okunoto Shioda Village which still produces salt using the 500-year-old traditional Agehama method. Wooden buckets of seawater are carried to sand fields to be crystallised, scattered and then boiled to produce the sea salt with no additives. This salt is then used to prepare the buri which is then quickly broiled in a large burner to produce a charred exterior, while keeping the interior raw and fresh.

Translated as the Grilled Seafood Three-Colored Rice Bowl, this is our recommended dish and it comes with buri tataki, salmon (サーモン, Sāmon) tataki, and maguro (マグロ, Tuna). Giving you a good variety of different types of fish to compare, while also allowing you to savor the freshness of the ingredients.
のどぐろ入りスペシャル丼
Special Don including Nodoguro

Those interested in trying something even more unique to Kanazawa can try this, it has the same ingredients as the Tataki Iri Sanshoku Don, with the addition of Nodoguro (のどぐろ, Blackthroat seaperch), an expensive local whitefish loved for its fatty meat, and is served topped with gold flakes.
能登ふぐのたたき丼
Noto Fugu Tataki Don

The more adventurous can also try the fugu (ふぐ, Pufferfish) tataki from the nearby Noto region, and it is served together with buri tataki. Fugu in Japan is very carefully prepared to remove any sort of toxins before serving, and undergoes stringent food safety standards.
