Tsurutontan is an udon (うどん) specialty shop that serves chewy [sanuki udon](/term/food/sanuki-udon. Their signature trait are their udon noodles that are served in bowls larger than a regular human face. Noodles are chewy, and can be upsized for free to up to 3 times in size.
When the bowl first arrives, you’ll be astounded by its size. When you first sip the soup, you can taste the lightness and richness of the clear broth. The udon noodles are also uniquely chewy, and smooth in texture, making them great to slurp down.
Tsurutontan Udon Noodle Brasserie's Unique Points (こだわり, Kodawari)
The soup stock is made using konbu (昆布, Kelp) from the freezing cold waters of Rishiri in Hokkaido, and highly nutritious katsuobushi (鰹節, Bonito Flakes) from the Makurazaki in Kagoshima, to produce a high-quality taste. All the noodles are freshly kneaded, cut, and boiled within each store to make agetachi (あげたち, freshly made) udon.

Tsuru (鶴) refers to the Japanese crane, a symbol of prosperity in Japan. Ton (沌) pays respects to udon’s long history in Japan, when it was first imported from China many centuries ago, it was known as Unton (温飩). Tan (啖) is the center character of the Japanese word for glutton who eats a lot in a healthy way, kentonka (健啖家). The recipe used by Tsurutontan has remained unchanged since its founding in Osaka in 1989.

Our recommendation is to get the Beef Broth Dipping Udon (Cold). Cold udon tends to have a better texture that is chewier. As it is a dipping udon, the hot broth is also more concentrated, and has a bigger umami (旨味, Savoriness) burst when you drink it.
