Pudding shops might be quite common across Japan, but Enoshima Pudding sets itself apart by making its pudding with Mugi-kogashi (麦こがし), roasted barley flour. Mugi-kogashi is made by roasting barley, and then stone grinding it down into flour, leaving it full of dietary fibre and minerals. This flour is then mixed with egg yolks, cream, milk and other ingredients to create the pudding.
