- Nama (生, Raw/Fresh) Shoyu (醤油, Shōyu, Soy Sauce) that is brewed using a traditional natural method goes well with the egg or the daikon oroshi
- Green Togarashi (唐辛子, Tōgarashi, Chili Pepper) with Salted Lemon has the sourness of the lemon together with the faint spiciness from the togarashi

Hikiniku to Come is one of the viral hit restaurants of the 2020s in Tokyo, serving up freshly grilled hamburgs to you one by one with a variety of delicious condiments to go alongside it. Unlike a traditional hamburg restaurant where you typically get one large hamburg along a side of rice, here you get three smaller hamburgs that you can eat one at a time atop your bowl of rice. And rather than traditional table seating, all seats are counter seats that surround an open kitchen in the centre. A chef cooks the hamburg fresh on the spot and serves it to you atop your own personal grill. The idea is to constantly enjoy freshly cooked hamburgs for the ultimate indulgence in juiciness and an endless combination of tastes using a variety of condiments. The rice is also refillable, so it's a great way to let the delicious juices of the hamburg complement the fluffy Japanese rice.

Hikiniku to Come Shibuya's Unique Points (こだわり, Kodawari)
Hikiniku to Come aims towards serving "seriously delicious food" (本気でうまいもの, honki de umai mono), with a focus on food that is freshly ground, freshly grilled, and freshly steamed (挽きたて、焼きたて、炊きたて). The hamburgs are made using ground meat that is freshly ground in-store every morning, then they are grilled on a charcoal fire right before your eyes before being served. The rice is also freshly steamed in a traditional hagama (羽釜) before being scooped out to serve. Allowing customers to experience the peak freshness of each ingredient at that very moment.
Each hamburg patty is freshly ground each morning and is made using 100% domestic Japanese beef in order to keep the quality and freshness up. Each patty is then cooked right before serving, and served one at a time so that customers can enjoy each piece at their maximum freshness. The rice is also constantly being cooked in progressive batches so that customers can always enjoy a bowl of freshly cooked rice, and even get seconds if they want.

Hikiniku to Come is one of the most memorable dining experience that you can get in Tokyo, both extremely upscale, yet affordable to the masses. The shop's interior is stunning with a modern rustic industrial look, and counter tables surround a personal open kitchen. It takes the traditional open kitchen concept and turns it into a table-side service like teppanyaki (鉄板焼き).
The food is also extraordinary, with each hamburg patty being grilled right before you. When served, they have the beautiful charred lines from the charcoal grill, and each piece just oozes with juice when you bite into it. We recommend just eating the first patty as-is so that you can enjoy the original taste. The patties are perfectly cooked, soft, moist, juicy, and perfectly seasoned
The chef typically starts serving up the second patty once they see that you're almost done with the first patty. And while three patties might not seem like much at first, you'll quickly find yourself stuffed.
If you've not had tamago kake gohan (卵かけご飯, Rice topped with egg) before, it's one of those classic Japanese breakfast dishes that is often eaten in Japan, but not overseas. The initial idea of eating raw eggs might be daunting to some, but rest assured that Japan's food hygiene is top-notch, and the Japanese regularly eat raw eggs. There's a beautiful simplicity to a dish that is just rice, egg, and shoyu (醤油, Shōyu, Soy Sauce) on top that is mixed together, and eaten almost similar to porridge.
Perhaps best of all, is how wide the range of condiments are here at Hikiniku to Come, with a condiment for everyone's tastes. Personally, we're a big sucker for the Ninniku Furikake, because who doesn't love fried garlic? We have a bad tendency of dumping mountain loads of it onto our rice because of how delicious it is, even having to ask to refill the container at times. The Taberu Shoyu is also a personal favourite of ours because of how well the shoyu and the onions go together.
Eating at Hikiniku to Come is an experience that we just can't recommend enough, and it's one of the best ways to eat hamburg in Tokyo.
Be warned though that it's super popular with the Japanese, so expect it to be very crowded. Unlike many other Japanese shops, prior reservation is typically required.
For the Shibuya branch, you need to make an advance reservation here and a deposit of ¥1,800 (the cost of the meal) is required. Reservations open every Friday at 9am for the next week (Monday to Sunday). The reservation system closes once all slots are filled. So if you're heading down, be sure to grab your slot in advance as walk-ins are strictly not allowed.
