Next Shikaku Osaka is a kaki (牡蠣, Oyster) broth specialty ramen (ラーメン, Rāmen) shop located near Namba (大阪, Ōsaka) and near the northern end of the Sennichimae Doguyasuji Shopping Street (千日前道具屋筋商店街, Sennichimae Doguyasuji Shotengai). Their menu consists of oyster ramen done three ways: a creamy oyster paitan version, a clear oyster chintan version, and an oyster tsukemen (つけ麺, Dipping noodles) version. One of the interesting things is that the interior consists of a digital art exhibition, similar to what you would find in teamLab exhibitions (チームラボボーダレス, Chiimu Rabo Bōdaresu), and it makes for a rather unique and memorable dining experience.
Oyster broth ramen has been gaining in popularity in Japan recently, due to the umami (旨味, Savoriness)-packed flavour of oysters, they actually make for a really good and robust broth. Here at Next Shikaku Osaka, you can find one of Osaka's Best Oyster Ramen restaurants, together with a bonus light-show and what the shop calls a "next-generation dining experience".
Next Shikaku Osaka's Unique Points (こだわり, Kodawari)
For Next Shikaku, their focus is on elevating the concept of oyster ramen to the next level. This includes the dining experience with all the light show elements, and also each part of the food itself.
For Next Shikaku, their chashu (チャシュウ, Chashū, Roasted Pork) is prepared similarly to the French dish of Petit salé (ポー・サレ), a type of pork dish that is marinated in salt over multiple days. Minimal amounts of unnecessary seasoning is added so as to preserve the original umami (旨味, Savoriness) of the pork, and so only salt is used to marinate the chashu. The chashu is made daily using aged pork that is then slow-roasted in an oven, and while it looks simple, there's a strong impact when you first taste it. It has a nice bite to it while preserving the natural sweetness of the meat.

Next Shikaku Osaka is a pretty eye-catching restaurant located along the crowded Sennichimae Doguyasuji Shopping Street (千日前道具屋筋商店街, Sennichimae Doguyasuji Shotengai), the shop features a beautifully minimalist exterior with a bright light-show-covered interior that really feels like a cross between a digital art exhibition and a restaurant. Oyster-broth ramen is pretty uncommon overseas and so it's a rather unique dish for foreigners to try, and something different from the usual ramen fare.
While Next Shikaku makes bold claims about how much oyster taste they infuse into their ramen, we're not quite sure that the dish itself achieves that lofty claim. In particular, one of our favourite ramen shops is Kuramu (貝出汁中華そば くらむ, Kai Dashi Chūka Soba Kuramu) in Tokyo (東京, Tōkyō), which is also an oyster broth ramen shop, and so when we compare the two, there is really no fight between them. We tried the Ikasu ramen and felt like the taste was a bit too light on the palate for us. It's not a bad bowl of oyster ramen, we've just really had way better at Kuramu, and so it fell short for us.
In general, Next Shikaku Osaka serves up a pretty decent bowl of oyster ramen and we can easily recommend it to foreigners who are in Osaka and looking for a unique bowl of ramen to try. In fact it might be the Best Oyster Ramen in Osaka, and definitely maybe the Koeru that uses the triple-soup base, or even the unique Asobu tsukemen might have made a bigger impact on us. For now, though, it's not really a shop that we would go back to, but we highly recommend going at least once to try it out and experience the digital art and dining experience that they offer.
In terms of crowdedness, it's also one of the less crowded options in Namba, which is typically filled with tourists as it's tucked away in the Sennichimae Doguyasuji Shopping Street (千日前道具屋筋商店街, Sennichimae Doguyasuji Shotengai), which is quieter at night as well. So it's a pretty good option if you're looking for a less-crowded ramen option in the heart of Namba.
Bonus Tip: You should really give their Aburi Niku Sushi a try if you've not tried any wagyu (和牛, Wagyū, Japanese cattle) sushi before. The meat is nice and fatty, giving it a creamy texture, and the juices mix well with the sushi rice (酢飯, Su-Meshi, Vinegared Rice), making for a very satisfying side dish.

こえる (牡蠣白湯)
Koeru (Oyster Paitan Ramen)

Koeru is the most popular dish in Next Shikaku, consisting of a creamy broth that "exceeds" (超える, koeru) regular oyster ramen through the combination of chicken and pork to form a triple-base with a stronger punch. The dish forms a good balance between the tastes of kaki (牡蠣, Oyster), pork, and chicken, so as to bring out the strongest umami (旨味, Savoriness) of each of them individually, while also bringing a harmony to the dish. The bowl of oyster ramen also comes with teuchimen (手打ち麺, Handmade Noodles) that uses a low water-to-flour ratio so as to produce a nice chewy texture to it when biting into it.
いかす (牡蠣清湯)
Ikasu (Oyster Chintan Ramen)

Ikasu is a clear broth version of oyster ramen that is said to "bring out the best" (活かす, ikasu) of 100% of the oyster. In order to not bring shame to its name, the broth uses only pure oyster dashi (出汁) mixed with oyster oil, oyster kaeshi (返し), and lastly oyster toppings. It's truly a bowl of ramen that makes the 100% best of the oyster. The taste is said to be designed for that of a mature tastebud, retaining some of the "fishiness" and bitterness of the original oyster taste in order to elevate the dish to the next level. For this bowl, a slightly thick chigirimen (ちぎり麺) is used with a 45% added water ratio in order to best absorb the umami (旨味, Savoriness) from the oyster broth.
あそぶ (牡蠣つけ麺)
Asobu (Oyster Tsukemen)

Asobu is Next Shikaku's playful take on a tsukemen (つけ麺, Dipping noodles), as asobu (遊ぶ) means "to play". The noodles used in this tsukemen are unlike any other ramen, using a special type of flat and square-ish noodle called Teigaku (棣鄂) developed together with a famous noodle manufacturer over a long time. It's a type of never-seen-before noodle that is extremely thin, flat, and wide. When you bite into it, it has a nice chewy texture, and it's soaked in konbu (昆布, Kelp) water in order to give it a lovely smooth texture. Even if you eat it without dipping it into the soup, it's delicious as is and you can taste the original taste of the flour. For the dipping broth, oyster paste was simmered over a long period of time, with tonkotsu (豚骨, Pork bones) added to it to richen and deepen the broth, in order to get an extremely rich bowl of oyster tonkotsu soup.

Kakimeshi is rice that has been cooked in oyster broth, so as to allow each individual grain of rice to soak up the umami (旨味, Savoriness) from the oysters. They also add konbu (昆布, Kelp), and katsuo (鰹, Bonito) to it to further enhance the taste of the rice.

Next Shikaku's Karaage is marinated overnight in their own special in-house blend of shoyu (醤油, Shōyu, Soy Sauce) tare (たれ, Sauce), allowing the meat to have a nice bite to it, while also overflowing in juiciness and umami (旨味, Savoriness) when you bite into it. The flour coating also has black pepper mixed into it to give it a nice accent and fragrance when you bite into it.

One of the most popular kaki (牡蠣, Oyster) dishes in Japan, Kaki Fry (カキフライ, Kaki Furai, Fried oysters) consists of large fresh plump oysters that are breaded in panko (パン粉, Breadcrumbs) and deep-fried. Each piece of kaki fry is fried to order at Next Shikaku so that its nice hot and crispy when served.

Next Shikaku's Beef Sushi (寿司) uses Japanese wagyu (和牛, Wagyū, Japanese cattle) brisket that is aburi-ed (炙り, Torched) on order, and when you bite into it, the fattiness and umami (旨味, Savoriness) from the meat come bursting out. Each piece is designed to be eaten in a single mouthful. Next Shikaku claims that once you start with one, you just can't stop.
